The lovely Lisa Snow Bunny...As you can see this was taken 18 years in the future! |
If you like rain. Which I do. The main reason, though not the only reason I like the rain, is because you never have to shovel it. I know its snowing like crazy up on Grouse and Cypress Mountains which is good for the lovely Lisa and Bro Steve who have ski passes that they haven't been able to use yet this season.
Cousin Squidly and Bro Steve at Cypress |
Of course the timing was perfect! The first snow of the winter comes the day before Chef Boy R Lisa goes back to work. She's working until Wednesday, then we are taking her brother Peter for his birthday lunch on Thursday. The lovely Lisa and Steve plan on skiing Cypress on Friday.
The other reason I like the rain is because it comes with the bonus grey. I pop vitamin D pills daily in the winter. To help compensate for the lack of Sun. I've been out here thirty-five years and I don't have an issue with it. I think it's especially hard on the Saskatchaweenies and the Manitubers. They come from winters of -35 degrees and sun so bright you need your Ray Bans. I've known a lot of people who get out here and can't take the rain and the grey and they leave. I got no problem with that! It's starting to get pretty crowded around here.
Don't get me wrong. I encourage everyone to come out and enjoy the beauty of the West Coast. The mountains, the rivers, the ocean. Spend lots of money then go home when you're done! And don't forget to bring an umbrella! I think that many generations ago, someone in my family tree must have screwed a duck! I've always loved the rain. I remember as a kid standing out in those wicked Ontario summer thunder storms after a day of 90 degree heat and 90 percent humidity. It's a good thing because its been raining for about twenty hours now. It was raining when I got up at 6:30a.m. and it's still raining as I write this at 2:15 a.m.
I dictated yesterdays blog to my tablet and after only one cup of drippy Joe I was headed down to the Green Room to work out.
Yesterday I kept putting it off, putting it off to watch football, putting it off to do nothing, just putting it off!
The first game was at 10 a.m. I wanted to get my workout done before the game started. Since I've been trying to increase the pace of my workout, this seems like the perfect opportunity. I did all five of my floor exercises. Ten sets of ten reps each. Front and Side lifts, Straight Arm Thrusts, Belly Crunches and No Stair Stretches.
I finished off with 200 One Stair Steps.
Post workout Squatch face |
I was done in less than twenty-five minutes. I had a shower, walked across the street to the 7-Eleven where I purchased a $10 ticket on today's two football games, Indianapolis and Dallas to win. My $10 ticket will pay me $16.20 if I win. I mean when I win!
Winning! |
Me and my winning ticket were sitting in front of the TV in Tiny TV town before kick-off. At half time, with the Colts ahead, I made myself some tuna salad lettuce wraps for lunch.
Build your own Lettuce wraps |
The lovely Lisa was just finishing a bowl of instant noodles. She was headed off to see Mama Lee and do some shopping at Stupid Store.
As soon I heard her car door close I was basking in the radiance of my fifty-five inches of high def football glory! Indianapolis made the first half of my ticket a winner and now I just needed the
Cowboys to do the right thing! Dallas pulled it out after a horrible start and made me a winner. Yay!
Football was done for the day by the time the lovely Lisa got home. With a winning ticket tucked into my pocket I made dinner for the lovely Lisa and myself. I've been wanting to do spare ribs in a pressure cooker that we just got.
Fancy Italian pressure cooker |
I've never used one before but I have seen videos of them on line exploding, and that seems quite exciting. I found a good recipe for pressure cooker ribs online and started preparing the ribs. I put together the dry rub in a freezer bag.
3 tbs paprika
1 tbs garlic powder
1/2 tsp ground pepper
1/2 tsp salt
I added the pieces of pork and massaged my meat for about twenty-five minutes. Now back to the pork.
I had the liquid and other ingredients already in the pressure cooker
3 cups water
3/4 cup ketchup
1/4 cup brown sugar
1/4 cup chinese vinegar
1 tsp Worcestershire sauce
Ready to load |
I seared the ribs about 3 minutes on each side then place them in the pressure cooker.
Nicely Seared |
When it gets up to pressure, turn it down to medium and let it cook for twenty-five minutes.
Our friend Duffy showed up unexpectedly just as dinner was ready. I had made six pounds of ribs. There was more than enough food. Besides, I needed an opinion on how fabulous my ribs were. Plus, with Duffy there, I got to watch the Canada / Slovakia Juniors hockey game on the big screen! God bless Duffy!
The ribs were very flavourful and the meat stayed quite firm. Sometimes when you braise ribs, the meat is falling off the bone but is kind of mushy. The texture of these ribs were like the long red chinese ribs you get back east.
A little late with the picture |
We haven't found them anywhere in Vancouver. Which seems weird since we have several hundred million Chinese restaurants. With a big pile of broccoli and a Squatch salad, we had a nice meal. Duffy headed out after dinner and the lovely Lisa went to bed. Her wake up time is 2:15 a.m. so she was in bed by 7:00. After I tucked her in I watched the second Hunger Games movie. I didn't think it was as good as the first. Then an episode of Lilyhammer and a couple of Blue Bloods. That's when the lovely Lisa got up to go to work. So like ships in the night, I pass
Chef Boy R Lisa on my way to bed. Thanks for reading. I appreciate all the comments and read them all. My weight on Weigh Day.
It's coming down slowly but surely. It came off so fast at the start I figured I'd be an Adonis by now! Unless Adonis is greek for sausage shaped, I've missed the mark. I feel great. My energy level is way up and I'm making the effort to eat and play healthy.
That's all I've got
Till next time
Peace out y'all
